A 6 mil poly sheeting moisture barrier should be install over the concrete first before the laminate is installed. This should be done no matter what part of the country you reside.

We want to install this in a kitchen. Will spills harm the floor in any way?

All spills should be cleaned up right away. Spills that are left unattended to could cause the seams to swell if the water were the get in between the seams of the laminate.
