      I installed this countertop in my kitchen 4 years ago. It's low maintenance and highly versatile. I prefer to chop on cutting boards simply so I don't mar-up the surface too much, but if someone DOES cut on the countertop it's perfectly safe and no harm done. I also set pans straight from stovetop or oven onto the butcher block. Treatment with mineral oil twice yearly protects the wood and gives it a lovely warm glow. Lots of compliments. I've recommended this countertop to friends and they love it also.

        I bought this for a wood shop bench I intend to beat up a lot. It's fine for these specific needs. But it is annoying that there are ~25 gaps from 1/64" to 1/8" between board ends that are irritating and have been filled with crumbly wood filler. I just wanted a bench top without any gaps it in, I'll have this forever. Finishing it with anything but a solid sealant in a kitchen would get food and liquid in the gaps that would be impossible to clean. If I was going to use this for a kitchen countertop I would be returning it.

        I needed a piece of butcher block for a stand alone kitchen cabinet that I built for my son. This served the purpose after I cut it down to size. There was enough left over to make several cutting boards. The butcher block requires some filling of small gaps between the ends of the laminated strips and it needs to be sanded to create a smooth finish. I would also recommend wetting it down before a final sanding to raise the grain. It will need to have a finnish applied such as food safe mineral oil, preferably several coats.

                It makes a gorgeous counter top that is practical, do the mineral oil liberally really brings out the color. Be aware very heavy and solid. Cutting out sink holes etc will take several blades but worth it.

                    Advertised dimensions were 12' long, 1.5" thick, and 25" wide.
                    Actually only 24.75" wide. Had to pull it out from the wall and adjust backsplash a bit

                      It was mentioned in another answer that this is not a single solid piece of maple. Does that mean that an exposed cut end will not look the similar an end that hasn't been cut? In other words, I know it's possible to put in an undermount sink or cut to fit an island, but I'm wondering if the edges will look different than the uncut edges as it is out of the box (are the edges before it is cut concealing something different on the inside).
